EGG SALAD ROLL-UP’S

Ingredients

  • 12 hard boiled eggs shelled & mashed
  • 5 strips bacon cooked and crumbled
  • ½ C mayonnaise (I use light)
  • 1 Tbs mustard
  • salt to taste
  • pepper to taste
  • flour tortilla shells or wraps

Instructions

  • Mash eggs in a large bowl. Add cooked & crumbled bacon to eggs. Mix in mustard and Mayo. If needed, add more Mayo and mustard to make sure egg mixture is moist. Salt and pepper to taste. Spread mixture onto tortilla. Roll up and slice. Secure each roll-up with a toothpick. Makes approximately 4 large tortilla rolls; cut each tortilla roll into approx 5-6 roll-ups.
