MOM’S BEEF STROGANOFF

Ingredients

  • 2-3 lbs. Round steak; cut in bite size pieces or strips or ground beef
  • 1/4 C Onion finely chopped
  • 1 pint sour cream
  • 2 packets of Au jus mix
  • 2 tsp parsley
  • 4-6 mushrooms sliced (can omit if kids don't like)

Instructions

  • Brown meat and onion in small amount of hot oil. (if using ground beef, do NOT use oil and drain; rinse fat after meat is browned) When brown, add mushrooms and simmer 15 min. Add
  • Aujus packets, parsley and 1 C water. (You may need to add a little water to thin or flour/water mixture to thicken.) After meat gravy is thick, add sour cream and heat through.
  • Serve over egg noodles or baked potatoes, or use as dip with French bread.

Notes

*Sometimes I add 1 can green beans and my kids don't even complain!
You can also make with with left over roast or stew meat.
