MOM's CHICKEN PUFFS

Ingredients

Chicken Filling

  • 1 can chicken drain juice/water
  • 2 stocks celery; finely chopped
  • 3-4 green onions; finely chopped
  • salt to taste
  • pepper to taste
  • mayo to taste

Puffs

  • 1 C water
  • ½ C butter
  • 1 C flour
  • 4 eggs

Instructions

  • Mix chicken filling ingredients all together and refrigerate until ready to use.
  • Heat oven to 400F.
  • Combine water and butter in sauce pan and bring to a rolling boil. Mix in flour, stirring vigorously over low heat until mixture forms a ball, about 1 minute; remove from heat. Stir in eggs, one at a time; continue beating until smooth. Drop dough by spoonfuls onto un-greased cookie sheet. Bake 35-40 minutes or until puffed and golden. Cool on wire rack. Slit top, pull out soft dough and fill with chicken filling.
