MOM’s CHICKEN PUFFS

Chicken Filling
- 1 can chicken drain juice/water
- 2 stocks celery; finely chopped
- 3-4 green onions; finely chopped
- salt to taste
- pepper to taste
- mayo to taste
Puffs
- 1 C water
- ½ C butter
- 1 C flour
- 4 eggs
Instructions
- Mix chicken filling ingredients all together and refrigerate until ready to use.
- Heat oven to 400F.
- Combine water and butter in sauce pan and bring to a rolling boil. Mix in flour, stirring vigorously over low heat until mixture forms a ball, about 1 minute; remove from heat. Stir in eggs, one at a time; continue beating until smooth. Drop dough by spoonfuls onto un-greased cookie sheet. Bake 35-40 minutes or until puffed and golden. Cool on wire rack. Slit top, pull out soft dough and fill with chicken filling.
